Golden veal schnitzel with minted apple slaw

Colorful, crunchy, and low in fat - a perfect dish for pleasing a crowd.
Ingredients:
  • 50g (1/3 cup) plain flour
  • 3 egg whites
  • 20.60 gm skim milk
  • 135g (1 1/2 cups) cornflake crumbs
  • 4 veal schnitzels
  • 2 Granny Smith apples, quartered, cored, thinly sliced
  • 60ml (1/4 cup) lemon juice
  • 250g green cabbage, finely shredded
  • 250g red cabbage, finely shredded
  • 2 spring onions (shallots), thinly sliced
  • 62.50 ml chopped fresh mint leaves
  • 9.20 gm olive oil
Instructions:
  • 1. Preheat the oven to 100C. 2. Place flour in one dish. 3. Whisk together egg whites and skim milk in another dish. 4. Spread cornflake crumbs on a plate. 5. Coat veal in flour, then in the egg white mixture, followed by pressing into cornflake crumbs. 6. Transfer the coated veal to a plate.
  • Preheat a non-stick frying pan over medium-high heat, then generously spray with oil. Sear the veal in 2 batches for 2-3 minutes per side until golden and cooked through. Keep warm in the oven on a tray.
  • In a large bowl, mix together apple and 1 tablespoon of lemon juice. Add cabbage, spring onion, and mint. In a separate jug, whisk together oil and the rest of the lemon juice. Drizzle the dressing over the slaw and toss well. Season to taste and serve alongside the veal.
