Ingredients:
  • 1/2 tsp dried mixed herbs
  • 8 veal steaks
  • 250.00 ml (70g packet) dry breadcrumbs
  • 125.00 ml finely grated parmesan cheese
  • 125.00 ml plain flour
  • 2 eggs, lightly beaten
  • Chips, to serve
  • Salad, to serve
  • Lemon wedges, to serve
Instructions:
  • Tenderize steaks with a meat mallet until they are flattened to 5mm thickness, then season generously with salt and pepper.
  • Mix together breadcrumbs, parmesan, mixed herbs, and salt in a shallow dish. Spread flour on a plate and place eggs in another shallow dish.
  • Coat each piece of veal in flour, shaking off excess. Dip in egg, then coat with breadcrumbs, pressing firmly with fingertips.
  • Preheat oven to 160°C. In a non-stick frying pan over medium heat, add oil and butter and heat until sizzling. Cook schnitzels in batches for 2 minutes on each side until golden. Keep warm in the oven while cooking remaining schnitzels. Serve with chips, salad, and lemon wedges.
