Classic German wiener schnitzel: veal cutlets coated in seasoned bread crumbs, pan-fried to golden perfection in butter.
Ingredients:
  • 1.5 pounds veal cutlets
  • 0.5 cup all-purpose flour
  • 2 large eggs
  • 3 tablespoons grated Parmesan cheese
  • 2 tablespoons milk
  • 1 teaspoon minced parsley
  • 0.25 teaspoon pepper
  • 1 pinch ground nutmeg
  • 1 cup dry bread crumbs
  • 6 tablespoons butter
  • 4 slices lemon
Instructions:
  • Lay veal cutlets between plastic wrap on a sturdy surface and gently pound them with a meat mallet until they reach 1/4-inch thickness. Coat the cutlets with flour, shaking off any extra.
  • In a shallow bowl, whisk together eggs, Parmesan cheese, milk, parsley, salt, pepper, and nutmeg until well combined. Spread bread crumbs on a plate.
  • Coat each cutlet in the egg mixture, then press in bread crumbs. Chill on a plate in the fridge for 1 hour to overnight.
  • In a large skillet over medium heat, melt butter. Cook breaded cutlets until golden brown on each side, about 3 minutes per side. Transfer the cutlets to a serving platter, pour the pan juices over them, and garnish with lemon slices.
