Apple and cabbage slaw with pork cutlets

Whip up a quick and tasty meal by serving pork cutlets with coleslaw and beans. Perfect for the whole family!
Ingredients:
  • 4 (about 160g each) pork cutlets, French trimmed
  • 18.20 gm olive oil
  • 2 small Pink Lady apples, cored, quartered, cut into thin wedges
  • 1/4 small (about 300g) green cabbage, hard core removed, finely shredded
  • 65g (1/4 cup) Whole Egg Mayonnaise
  • 75g (1/4 cup) light sour cream
  • 21.00 gm fresh lemon juice
  • 40g (1/4 cup) salted baby capers, rinsed
  • 11.80 gm Dijon mustard
Instructions:
  • Season both sides of the pork generously with freshly ground black pepper. Heat oil in a large frying pan over medium heat. Sear the pork for 5-6 minutes on each side for a medium doneness, or until cooked to your preference. Remove from the pan and cover with foil on a plate. Allow it to rest for 5 minutes before serving.
  • Combine apple, cabbage, mayonnaise, sour cream, lemon juice, capers, and mustard in a large bowl to make the apple & cabbage slaw.
  • Plate the pork and apple & cabbage slaw, and serve alongside the steamed green beans.
