Elevate traditional pork and apple pairing with a delicious and crispy apple slaw.
Ingredients:
  • 4 x 180g pork cutlets
  • 18.20 gm olive oil
  • 55g caster sugar
  • 250ml chicken stock
  • 1 long red chilli, seeds removed, finely chopped
  • 20.00 ml grated ginger
  • 2 garlic cloves, finely chopped
  • 24.40 gm fish sauce
  • 1/2 small savoy cabbage, shredded
  • 2 carrots, grated
  • 2 Granny Smith apples, cut into matchsticks
  • 250.00 ml mint leaves, roughly torn
  • 23.40 gm Dijon mustard
  • 225g mayonnaise
  • Juice of 1 lemon, plus wedges to serve
  • Chopped peanuts, to serve
Instructions:
  • Season the pork generously. Heat oil in a frypan over medium-high heat, then sear the pork for 2-3 minutes on each side until golden. Set aside once cooked.
  • Pour vinegar and 1/4 cup (55g) sugar into the pan and let it caramelize for 2-3 minutes. Stir in stock, chilli, ginger, garlic, and fish sauce, bringing it to a boil. Reduce heat and simmer for 3-4 minutes until it thickens. Add pork cutlets back to the pan and cook for 1-2 minutes until they are fully coated in the sauce.
  • In a separate bowl, mix together cabbage, carrot, apple, and mint. Add Dijon mustard, mayonnaise, lemon juice, and an extra teaspoon of caster sugar. Toss the dressing with the slaw mixture.
  • Plate the pork and slaw, then generously sprinkle them with peanuts before serving with lemon wedges.
