Sesame seeds create a flavorful, nutrient-rich crust.
Ingredients:
  • 24.00 gm sesame seeds
  • 4 (150g each) fresh tuna steaks
  • 1/4 small green cabbage, trimmed, shredded
  • 1 large red apple, cored, cut into matchsticks
  • 3 large celery sticks, trimmed, cut into matchsticks
  • 20.00 ml chopped fresh chives
  • 31.50 gm salt-reduced gluten-free soy sauce
  • 31.50 gm lemon juice
  • 2.50 gm caster sugar
  • 1 tsp sesame oil
  • 40.00 ml pomegranate seeds
Instructions:
  • Spread sesame seeds on a plate and press one side of the tuna into the seeds to coat. Set aside.
  • Combine the cabbage, apple, celery, radish, and chives in a large bowl. Mix the soy sauce, lemon juice, sugar, and sesame oil in a small bowl until the sugar is dissolved.
  • Preheat a large non-stick frying pan over high heat and spray with olive oil. Place the tuna in the pan, sesame-side down, and sear for 1-2 minutes until golden. Flip and cook for an additional minute for medium doneness or to your preference.
  • Arrange the slaw on plates, layer with tuna, drizzle with dressing, and sprinkle with pomegranate seeds.
