Cafe latte lamingtons with strawberry jam

Australian classic dessert: Lamingtons with jam and coffee cream - perfect for any time of day!
Ingredients:
  • 20.00 ml coffee liqueur (such as Tia Maria)
  • 12.00 gm icing sugar
  • 6 Chocolate Lamingtons, halved horizontally
  • 115g (1/3 cup) strawberry jam
  • Dark chocolate curls, to serve
Instructions:
  • In a medium bowl, combine the cream, liqueur, and icing sugar. Use an electric beater to whip until firm peaks form. Set aside 1/4 cup of the mixture.
  • Spread the jam on the cut side of the lamington bases.
  • Spread the cream mixture over the jam, add the final lamington on top. Plate individually and garnish with the remaining cream mixture and chocolate curls before serving.
