Whip up a scrumptious coffee-chocolate loaf inspired by cafe treats.
Ingredients:
  • 1 1/2 cups Gold Medal™ all-purpose flour
  • 1 cup granulated sugar
  • 1/2 cup shortening
  • 3/4 cup eggnog or half-and-half
  • 2 teaspoons baking powder
  • 2 teaspoons instant coffee granules or crystals
  • 4 egg yolks
  • 2 oz unsweetened baking chocolate, melted, cooled
  • 1 teaspoon instant coffee granules or crystals
  • 1 tablespoon hot water
  • 1 cup powdered sugar
  • 2 teaspoons butter or margarine, softened
Instructions:
  • Preheat oven to 350°F and generously grease only the bottom of a 9x5-inch loaf pan with shortening or cooking spray and lightly flour it.
  • In a large bowl, use an electric mixer to beat all bread ingredients on medium speed for about 30 seconds, making sure to scrape the bowl constantly until fully blended. Increase speed to high and beat for 3 minutes, scraping the bowl occasionally. Transfer the mixture into the pan.
  • Bake for 1 hour 5 minutes to 1 hour 10 minutes until a toothpick inserted in the center comes out clean. Let it cool for 10 minutes, then transfer from the pan to a cooling rack. Allow to cool completely for about 1 hour.
  • Start by dissolving instant coffee in hot water. Then, combine the coffee, powdered sugar, and butter in a small bowl until smooth. If needed, add a few drops of hot water to thin out the mixture for drizzling. Drizzle the glaze over the loaf and refrigerate wrapped in plastic for up to 1 week.
