Ingredients:
  • 125.00 gm margarine
  • 135.00 gm brown sugar
  • 56.25 gm white sugar
  • 36.40 gm extra light olive oil
  • 4.40 gm vanilla essence
  • 3 medium bananas, ripe
  • 1.25 gm cinnamon
  • 0.30 gm mixed spice
  • 2.50 gm bicarbonate of soda
  • 8.00 gm baking powder
  • 1.20 gm salt
  • 128.75 gm milk
  • 5.30 gm lemon juice
  • 500.00 ml flour
Instructions:
  • Preheat your oven to 180C and line a 23cm loaf tin with baking paper.
  • Combine margarine and sugars in a large bowl. Beat with an electric mixer on medium speed for 3-4 minutes until light and fluffy. Gently fold in oil and vanilla essence.
  • Blend ripe bananas until smooth and incorporate into the batter. Gently incorporate the sifted cinnamon, mixed spice, bicarbonate of soda, baking powder, and salt into the mixture.
  • Mix together milk and lemon juice in a separate bowl.
  • Sift 1 cup of flour into the mixture, followed by adding 1/4 cup of milk or lemon. Gently fold together, then repeat with the remaining flour and milk.
  • Bake until a skewer inserted in the middle comes out clean, for about 45-55 minutes.
