Cafe-style gluten-free raspberry lime friands - simply delicious!
Ingredients:
  • 5 egg whites, lightly beaten
  • 133.00 gm almond meal
  • 2 tsp finely grated lime rind
  • 21.00 gm lime juice
  • 225.00 gm gluten-free pure icing sugar, sifted
  • 165.00 ml gluten-free plain flour
  • 150g butter, melted, cooled
  • 375.00 ml frozen raspberries
Instructions:
  • Preheat your oven to 190C/170C fan-forced. Grease a 12-hole, 1/3 cup-capacity muffin pan generously. In a bowl, mix together egg white, almond meal, lime rind, lime juice, icing sugar, flour, and butter until well combined. Spoon the mixture evenly into the muffin pan. Place raspberries on top of each muffin.
  • Bake for 20-22 minutes until golden and firm. Let cool in the pan for 2 minutes before transferring to a wire rack. Serve.
