Indulgent chocolate coffee liqueur truffles - perfect for gifting or savoring.
Ingredients:
  • 2 tsp instant coffee powder
  • 10.00 gm boiling water
  • 40.40 gm thickened cream
  • 3 x 180g blocks white chocolate, chopped
  • 20.20 gm Irish cream
  • 20.00 ml coffee beans
Instructions:
  • In a bowl, mix coffee powder with boiling water until dissolved. In another microwave-safe bowl, combine cream and a third of the chocolate. Microwave uncovered on MEDIUM for 2 to 3 minutes, stirring every minute until smooth. Add Baileys and coffee mixture, stir well, cover, and refrigerate for 3 to 4 hours until firm.
  • Prepare a baking tray lined with parchment paper. Scoop 2 teaspoons of the chocolate mixture and shape it into balls. Arrange the balls on the tray and freeze until they are firm.
  • Take half of the remaining chocolate and put it in a microwave-safe bowl. Microwave on MEDIUM (50%) for 2 to 3 minutes, stirring every minute with a metal spoon, until melted and smooth. Dip truffles in the melted chocolate using a fork, then shake off excess. Put truffles back on the tray and refrigerate for 20 minutes until set. Repeat the same process with the other half of the chocolate, placing a coffee bean on top of each truffle before serving.
