Spice up your meal with Cajun drumsticks and corn salsa for an authentic taste experience.
Ingredients:
  • 8 chicken drumsticks
  • 15.00 gm Cajun seasoning
  • 60ml olive oil
  • Salt and cracked black pepper
  • 2 cobs of corn, husks removed
  • 1 avocado, peeled, halved, stoned removed, chopped
  • 1 red capsicum, seeded and chopped
  • 62.50 ml coriander leaves
  • 9.20 gm olive oil, extra
  • 10.60 gm lime juice
  • Salsa, to serve
  • Sour cream, to serve
Instructions:
  • Score the chicken with deep cuts through the skin. Mix Cajun spice, oil, salt, and pepper in a bowl. Rub the mixture over the chicken, pressing it into the cuts. Refrigerate covered for 1 hour.
  • Preheat grill to high. Brush corn with oil and grill for 6-8 minutes, turning occasionally, until slightly charred. Set aside to cool before handling.
  • Preheat the barbecue grill to medium heat. Take the drumsticks out of the marinade and grill for 8-10 minutes until they are well browned and fully cooked.
  • Stand the corn cob upright and cut off the kernels with a sharp knife. Transfer the kernels to a bowl. Repeat with the remaining corn cob. Mix in capsicum, coriander, extra oil, lime juice, salt, and pepper until well combined.
  • Garnish chicken with salsa, sour cream, and lime wedges.
