Cajun chicken with mango salsa

Spice up your week with Cajun chicken paired with fresh mango salsa.
Ingredients:
  • 4 (about 250g each) single chicken breast fillets, skin on
  • 36.80 gm vegetable oil
  • 4.80 gm salt
  • 1 tsp garlic powder
  • 1 tsp onion powder
  • 1 tsp dried oregano
  • 1 tsp dried thyme
  • 2.50 gm sweet paprika
  • 1/4 tsp ground cayenne pepper
  • 1/2 tsp freshly ground black pepper
  • Mixed salad leaves, to serve
  • 1 ripe mango
  • 1 avocado, halved, stone removed, peeled, finely chopped
  • 1 red capsicum, halved, deseeded, finely chopped
  • 21.00 gm fresh lime juice
  • 20.00 ml finely shredded fresh mint
  • Salt and freshly ground black pepper, to season
Instructions:
  • Score the thickest part of each chicken breast, skin-side up, at 2cm intervals. In a large bowl, mix oil, salt, garlic powder, onion powder, oregano, thyme, paprika, cayenne, and black pepper. Add the chicken and coat evenly by turning it.
  • Preheat a frying pan over medium heat. Sear the chicken, starting with the skin side down, for 5 minutes per side. Place on a plate, loosely cover with foil, and set aside.
  • Prepare the salsa by slicing mango cheeks near the seed and removing the skin. Chop the mango finely and mix it in a bowl with avocado, capsicum, onion, lime juice, and mint. Season the salsa with salt and pepper. Serve the chicken with the salsa and salad leaves.
