Transforming classic red beans and rice into a simple, flavorful beef casserole.
Ingredients:
  • 1 pound lean ground beef
  • 0.5 teaspoon minced garlic
  • 1 onion, finely chopped
  • 1 small green bell pepper, finely chopped
  • 1 (14.5 ounce) can diced tomatoes
  • 1 (15 ounce) can dark red kidney beans, undrained
  • 1 cup converted long-grain white rice
  • 1 cup water
  • 1.5 teaspoons chili powder
  • salt and black pepper to taste
Instructions:
  • Preheat your oven to 375°F (190°C) for a perfect bake.
  • 1. Heat a large saucepan over medium-high heat and add the ground beef. Cook until it's crumbly, browned, and no longer pink. Remove any excess grease. Stir in garlic, onion, and green bell pepper; cook until the onion is soft and translucent, around 7 minutes. Add tomatoes and simmer until liquid is absorbed, about 5 minutes.
  • After the tomato liquid is absorbed, mix in kidney beans, rice, and water. Add chili powder, salt, and pepper to taste. Transfer the mixture to a 9x13-inch baking dish and tightly cover with aluminum foil.
  • Cook until the rice is tender and has absorbed the liquid, approximately 45 minutes to 1 hour in the preheated oven.
