Crispy cereal-coated chicken with colorful peppers, beans. Ready in under an hour, serves six.
Ingredients:
  • 1 1/2 cups Total Corn Flakes® cereal, crushed (3/4 cup)
  • 1 egg white
  • 1 teaspoon water
  • 6 boneless skinless chicken breast halves (about 1 1/2 lb)
  • 1 teaspoon dried Cajun seasoning
  • 2 medium red, orange and/or yellow bell peppers, cut into 1/2-inch-long strips
  • 1 medium sweet onion (Maui, Texas Sweet or Walla Walla), cut into thin wedges
  • 1 bag (14 oz) frozen whole green beans
  • 1/4 teaspoon salt
  • 1 tablespoon olive oil
Instructions:
  • Preheat oven to 450°F. Line one 13x9-inch pan with foil and spray with cooking spray, then repeat with the second pan.
  • Place crushed cereal in a small bowl. In a separate bowl, whisk together egg white and water until frothy. Dip chicken breast halves into the egg white mixture, sprinkle with Cajun seasoning, then coat with the cereal. Transfer the coated chicken to a foil-lined pan.
  • Coat all roasted vegetable ingredients in the second pan by tossing them together.
  • Bake both pans in the oven for 18 to 23 minutes, remembering to stir the vegetables halfway through, until the chicken is tender and the juices run clear, and the vegetables are crisp-tender.
