Indulge in flavorful Cajun red beans served with rice and cornbread.
Ingredients:
  • 1 pound dried pinto beans
  • 3 tablespoons bacon grease
  • 0.25 cup chopped salt pork
  • 1.5 cups chopped yellow onion
  • 0.75 cup chopped celery
  • 0.75 cup chopped green bell pepper
  • 0.5 teaspoon freshly ground black pepper
  • 1 pinch chipotle chile powder
  • 0.5 pound smoked sausage, split in half and cut into 1-inch pieces
  • 3 bay leaves
  • 2 teaspoons chopped fresh thyme
  • 3 tablespoons chopped garlic
  • water as needed
Instructions:
  • In a large container, submerge the pinto beans in cool water making sure they are covered by several inches. Allow the beans to soak for 15 minutes, then drain and rinse them.
  • In a large pot, heat bacon grease over medium-high heat. Cook and stir salt pork in the hot grease for 1 minute. Add onion, celery, bell pepper, black pepper, and chipotle powder to the salt pork. Cook and stir until the vegetables are soft, about 4 minutes.
  • Combine smoked sausage, bay leaves, parsley, and thyme into the salt pork mixture and sauté until the sausage is browned, which should take around 4 minutes. Then, add garlic and cook until aromatic, approximately 1 minute.
  • Fold the beans into the savory sausage blend and add just enough water to ensure they are fully submerged. Bring the mixture to a gentle boil, then transfer everything to a slow cooker for easy, hands-off cooking.
  • Begin by cooking on High for 1 hour. Then, switch to Low heat and continue cooking until beans are tender, adding water if needed, for approximately 6 more hours.
  • Gently smash a quarter of the beans against the side of the slow cooker using the back of a heavy spoon. Let the beans cook on Low until they are tender and creamy, about 15 to 20 minutes longer. Don't forget to take out the bay leaves.
