Zesty Spicy Red Snapper Recipe.
Ingredients:
  • 1 teaspoon dried basil
  • 1 teaspoon garlic powder
  • 0.5 teaspoon onion powder
  • 0.25 teaspoon dried oregano
  • 0.25 teaspoon ground cayenne pepper
  • 2 tablespoons butter
  • 1 tablespoon olive oil
  • 6 (6 ounce) fillets red snapper
  • salt to taste
Instructions:
  • Combine paprika, black pepper, thyme, basil, garlic powder, onion powder, oregano, and cayenne pepper on a large piece of wax paper.
  • In a small saucepan over medium heat, melt the butter and oil together. Brush both sides of the snapper fillets with the melted butter-oil mixture, reserving some for later. Then coat both sides of the fillets with the paprika mixture.
  • Preheat a large cast iron skillet over high heat until a drop of water sizzles on contact.
  • Pour half of the remaining butter-oil mixture over one side of the fish fillets. Place the fillets in the hot skillet, butter-side down, and cook until deeply browned, approximately 5 minutes. Drizzle the rest of the butter-oil mixture over the fillets, then flip them over. Continue cooking until the fish is browned and flakes easily with a fork, about 5 more minutes. Season with salt to taste.
