Cajun Shrimp Mac and Cheese

Elevate mac and cheese with shrimp, Creole seasoning, Parmesan, Fontina, and mozzarella.
Ingredients:
  • 1.5 tablespoons butter
  • 1 shallot, finely chopped
  • 1 clove garlic, minced
  • 2 cups pipe rigate pasta
  • 1 cup milk
  • 0.25 cup whipping cream
  • 1 (12 fluid ounce) can evaporated milk
  • 1.5 cups cooked medium shrimp
  • 1.5 cups shredded mozzarella cheese
  • 0.5 cup shredded Parmesan cheese
  • 0.33333334326744 cup shredded Fontina cheese
  • 1 teaspoon seafood seasoning (such as Old Bay®)
  • 1 teaspoon Creole seasoning
  • 0.5 cup panko bread crumbs
  • 0.5 teaspoon seafood seasoning (such as Old Bay®)
  • 0.5 teaspoon Creole seasoning
  • 1 tablespoon butter, melted
Instructions:
  • Preheat your Instant Pot® on Saute mode, then melt butter inside. Cook shallot and garlic until fragrant for about 1 minute. Turn off the Saute function and let the cooker cool down.
  • Stir pasta in shallot-butter sauce until coated, then add milk and whipping cream. Lock lid, select high pressure, and set timer for 10 minutes following manufacturer's instructions. Let pressure build for 10 to 15 minutes.
  • Follow the manufacturer's instructions to naturally release pressure for 10 minutes. Then, use the quick-release method to release any remaining pressure. Finally, unlock and remove the lid.
  • Preheat the oven to 350 degrees F (175 degrees C) and generously coat an 8x8-inch casserole dish with cooking spray.
  • Mix in the evaporated milk, cooked shrimp, cheeses, seafood seasoning, and Creole seasoning with the pasta until well combined. Then, transfer the mixture to the casserole dish.
  • Combine panko, seafood seasoning, and Creole seasoning, then mix in melted butter for the flavorful crumb topping. Spread evenly over the casserole dish.
  • Bake in the preheated oven until bubbling, approximately 5 minutes. Then, broil until the top of the casserole is golden brown, for 2 to 4 minutes.
