Cajun Smothered Pork Chops

Savor quick and satisfying skillet pork chops in only 15 minutes!
Ingredients:
  • 4 bone-in pork loin chops, 1/2 inch thick (about 1 lb), trimmed of fat
  • 2 teaspoons salt-free extra-spicy seasoning blend
  • 2 teaspoons vegetable oil
  • 1/2 medium onion, sliced
  • 1 can (14.5 oz) zesty diced tomatoes with jalapeño peppers, undrained
Instructions:
  • Season both sides of the pork chops generously with the flavorful seasoning blend. Heat oil in a 12-inch nonstick skillet over medium-high heat. Add the onion and cook for about 2 minutes until slightly tender, stirring occasionally. Push the onion to one side of the skillet.
  • Place the pork in the skillet and cook for approximately 3 minutes, turning it once, until it is beautifully browned. Add the tomatoes, bring to a boil, then lower the heat. Cover and let it cook for 4 to 8 minutes until the pork is no longer pink in the center.
