Grilled corn with Cajun butter - a flavorful family favorite!
Ingredients:
  • 8 tablespoons (1 stick) salted butter
  • 8 ears fresh corn, husks removed
  • 1 tablespoon Cajun seasoning, homemade or store-bought
  • For garnish
  • 1/4 cup Cotija cheese
  • 1/4 cup finely chopped cilantro
Instructions:
  • Preheat the grill on high until it reaches 550℉.
  • Melt the butter in a small saucepan over medium heat, stirring occasionally until fully melted, about 1 to 2 minutes. Remove from heat.
  • Brush the corn generously with melted butter, using a heat-resistant basting brush. Reserve 2 tablespoons of melted butter for later use. Place the buttered corn on a serving platter or plate.
  • Coat the corn evenly with the Cajun seasoning.
  • Grill the corn: Place each ear directly on the grill grate and cook for 10 to 15 minutes, turning every 2 to 3 minutes to char evenly. Baste with butter and check for tenderness by gently pressing the kernels with the tongs.
  • After grilling, transfer the corn to a serving platter. Brush with extra butter, then top with Cotija cheese and cilantro before serving promptly.
