Fall-inspired pumpkin carrot cake cookie sandwiches with creamy cream cheese frosting, ready in just one hour!
Ingredients:
  • 1 box Betty Crocker™ Delights Super Moist™ Carrot Cake Mix
  • 3/4 cup canned pumpkin (not pumpkin pie mix)
  • 1/4 cup butter or margarine, melted
  • 1 teaspoon pumpkin pie spice
  • 1 tub (16 oz) Betty Crocker™ Rich & Creamy Cream Cheese Frosting
Instructions:
  • Preheat oven to 350°F (325°F for dark or nonstick pans) and grease cookie sheets. In a large bowl, combine cake mix, pumpkin, butter, egg, and pumpkin pie spice until well blended. Drop rounded tablespoonfuls of dough onto the prepared cookie sheets.
  • Bake for 11 to 14 minutes until puffed and set in the center. Allow to cool for 2 minutes, then transfer from cookie sheets to a cooling rack. Let cool completely for about 15 minutes.
  • Pair up cookies based on their size. Spread frosting on the bottom of one cookie and then sandwich it with its matching cookie.
