Calabacita is a cherished Mexican dish with unique family recipes using zucchini.
Ingredients:
  • 36.40 gm extra virgin olive oil
  • 500g pork fillet, trimmed, cut into 2cm pieces
  • 1 brown onion, chopped
  • 3 garlic cloves, crushed
  • 2 fresh jalapeño chillies, seeded, finely chopped
  • 1.25 gm ground cumin
  • 1/2 tsp dried oregano
  • 2 corn cobs, kernels removed
  • 1 red capsicum, cut into 1.5cm pieces
  • 2 large zucchini, halved lengthways, cut into 1cm slices
  • 4 tomatoes, chopped
  • 250.00 ml grated extra-sharp cheddar
  • Fresh coriander leaves, to serve
Instructions:
  • In a large heavy-based saucepan over medium-high heat, heat half of the oil. Brown the pork in two batches for 2 to 3 minutes each. Transfer to a heatproof bowl and cover to keep warm.
  • Add the rest of the oil along with the onion to the pan and cook until onion is softened, for about 5 minutes. Then, add garlic, chili, cumin, and oregano and cook until fragrant, for about 1 minute. Next, add corn and capsicum and cook for 3-4 minutes. Return pork to the pan, add zucchini and tomato, stirring well to combine. Cover and reduce heat to medium-low, cooking for about 10 minutes until pork is cooked through and zucchini is tender.
  • Take the pot off the heat and gently fold in half of the cheese, seasoning with salt and pepper. Serve topped with fresh coriander and the rest of the cheese.
