Garlic tomato sauce sauteed squid over linguine. Delicious!
Ingredients:
  • 3 tablespoons olive oil
  • 3 cloves garlic, sliced
  • 1 (28 ounce) can tomato puree
  • 28 fluid ounces water
  • 0.5 cup red wine
  • 1 teaspoon white sugar
  • crushed red pepper to taste
  • 1 (16 ounce) package uncooked linguine pasta
  • 3 pounds squid, cleaned and sliced into rings
Instructions:
  • In a large saucepan over medium heat, sauté garlic in olive oil until lightly browned. Add tomato puree, water, red wine, salt, sugar, and crushed red pepper. Bring to a boil, then simmer for 30 minutes, stirring occasionally.
  • Bring a large pot of generously salted water to a vigorous boil. Add linguine and cook until perfectly al dente, about 8 to 10 minutes. Drain pasta and get ready to enjoy!
  • Gently fold calamari into the savory tomato puree and simmer for about 15 minutes until the squid turns a beautiful opaque color. Keep an eye on it to prevent overcooking. Serve the tender calamari and flavorful sauce over al dente linguine.
