Satisfy your craving with a light and flavorful calamari pasta dish.
Ingredients:
  • 9.20 gm olive oil
  • 4 anchovy fillets, drained, finely chopped
  • 1 small red chilli, deseeded, finely chopped
  • 700ml bottle tomato pasta sauce
  • 127.50 gm salt reduced chicken style liquid stock
  • 500g cleaned calamari, cut into 1cm-thick rings
  • 62.50 ml flat-leaf parsley, chopped
  • 400g dried wholemeal spaghetti
Instructions:
  • In a saucepan over medium heat, warm the oil. Add onion, garlic, anchovies, and chili. Sauté for 5 minutes, stirring occasionally until the onion softens. Pour in the sauce and stock and bring to a boil. Reduce the heat to medium-low and simmer, partially covered, for 5 minutes.
  • Add succulent calamari and sauté until tender, around 3 minutes. Take off the heat and gently fold in fresh parsley.
  • Boil pasta in salted water according to package instructions.
  • After draining the pasta, transfer it back to the saucepan. Combine with the calamari mixture and gently toss over low heat until warmed through. Finish by seasoning with salt and pepper before serving.
