Spaghetti with Tomato and Sausage Sauce

Simmer smoked sausage, mushrooms, red wine, tomatoes, herbs, and sugar for a rich sauce served over pasta with Parmesan.
Ingredients:
  • 1 pound beef sausage
  • 1 onion, minced
  • 2 cups fresh sliced mushrooms
  • 0.25 cup olive oil
  • 2 (6 ounce) cans tomato paste
  • 1 (46 fluid ounce) can tomato juice
  • 1 (16 ounce) can crushed tomatoes
  • 1 cup Burgundy wine
  • 1.5 tablespoons dried oregano
  • 2 tablespoons dried parsley
  • 1 tablespoon minced garlic
  • 2 tablespoons garlic salt
  • 0.5 cup white sugar
  • 2 pounds spaghetti
Instructions:
  • Preheat the oven to 350°F (175°C). Bake the sausage for 30 minutes, then slice into bite-sized pieces before setting aside.
  • In a Dutch oven, saute onion and mushrooms in olive oil until tender. Remove and set aside. Stir in tomato paste, tomato juice, Italian tomatoes, and wine until smooth. Add oregano, basil, parsley, garlic, garlic salt, and sugar. Return mushroom mixture to the Dutch oven with sausage. Bring to a boil, then simmer for at least 3 hours, covering if sauce thickens too much.
  • Prepare the pasta as instructed on the package, then drain well. Top the pasta with the sauce before serving.
