Create bite-sized meat and potato appetizers with a spicy wasabi twist for a fun get-together.
Ingredients:
  • 10 small (about 2-inch) Yukon gold or red potatoes
  • 1 tablespoon olive oil
  • 1/2 teaspoon garlic salt
  • 1/4 cup mayonnaise
  • 1 teaspoon wasabi powder or prepared horseradish
  • 1/4 teaspoon minced garlic
  • Dash white pepper
  • 1/4 lb. shaved London-broil roast beef (from deli)
  • 30 slices pimiento-stuffed green olives
Instructions:
  • Preheat oven to 400°F. Trim off potato ends and discard. Slice potatoes into 3/8-inch-thick pieces (approximately 3 slices per potato). Place slices on a baking sheet. Brush with oil and sprinkle with garlic salt.
  • Bake at 400°F until tender and golden brown, about 15-20 minutes. Allow to cool completely for about 20 minutes.
  • In a small bowl, blend together mayonnaise, wasabi powder, garlic, and pepper until fully combined.
  • Arrange potato slices on a beautiful serving platter. Drizzle each slice with a generous 1/2 teaspoon of the delicious mayonnaise mixture. Layer on the succulent roast beef and finish off with a decorative olive slice on top of each slice. Enjoy!
