Savory herb-spiced ground beef loaf with diced veggies and a smoky mesquite glaze.
Ingredients:
  • 1 pound ground beef
  • 0.75 cup diced red onion
  • 0.5 cup diced green bell pepper
  • 0.5 cup diced celery
  • 2 eggs
  • 0.25 cup soy sauce
  • 0.33333334326744 cup ketchup
  • 2 tablespoons dried basil
  • 1 tablespoon dried parsley
  • 1 tablespoon dried oregano
  • 2 teaspoons garlic powder
  • 2 teaspoons ground black pepper
  • 1 cup quick cooking oats, or as needed
  • 0.25 cup brown sugar
  • 0.25 cup ketchup
  • 3 tablespoons brown mustard
  • 0.5 teaspoon liquid mesquite smoke flavoring
  • 0.5 teaspoon ground black pepper
  • 0.5 teaspoon paprika
Instructions:
  • Preheat your oven to a toasty 350 degrees F (175 degrees C) and elegantly line a 9x13 inch baking pan with a chic aluminum foil.
  • Combine beef, onion, green bell pepper, celery, eggs, soy sauce, ketchup, basil, parsley, oregano, garlic powder, and 2 teaspoons pepper in a large bowl. Add 1/2 cup oats and mix well. Gradually add the remaining oats in 1/4 cup increments until the mixture is firm but not stiff. Shape into a loaf and place in the prepared baking pan.
  • Combine brown sugar, ketchup, brown mustard, mesquite smoke flavoring, 1/2 teaspoon pepper, and paprika in a bowl, then evenly drizzle over the meat loaf.
  • Bake meat loaf for 1 hour in a preheated oven until it reaches an internal temperature of at least 160°F (72°C).
