Elevate meatloaf with a savory blend of lamb and pork mince for a rich and flavorful twist.
Ingredients:
  • 250g lamb mince
  • 1 onion, peeled, coarsely grated
  • 1 carrot, peeled, coarsely grated
  • 35g breadcrumbs
  • 125.00 ml chopped fresh mint
  • 1 egg, lightly beaten
  • 2.50 gm paprika
  • Tomato chutney, to serve
Instructions:
  • Preheat the oven to 170°C. Line a 9cm x 19cm loaf pan with non-stick baking paper. Mix both types of minced meat, onion, carrot, breadcrumbs, mint, egg, garlic, and paprika in a bowl using your hands.
  • Press the mixture into the loaf pan to create a smooth surface. Cover with foil and bake for 30 minutes. Uncover and bake for an additional 30 minutes or until juices run clear when pierced with a skewer. Drain any excess liquid, let it rest in the pan for 5 minutes, then serve hot, warm, or at room temperature.
