Transport yourself to the past with this simple and delicious meatloaf, ideal for a comforting weeknight dinner.
Ingredients:
  • 1 large egg
  • 257.50 gm milk
  • 1kg beef mince
  • 1/2 red onion, finely chopped
  • 3 garlic cloves, peeled, trimmed, crushed and finely chopped
  • 100.00 gm rolled oats
  • 130.00 gm tomato ketchup
  • 24.40 gm Worcestershire sauce
  • 23.40 gm Dijon mustard
  • 1/2 tsp cayenne pepper (optional)
  • Flake salt, for serving
Instructions:
  • Preheat the oven to 180C. Combine the mince, onion, and garlic, then mix in the oats. Finally, add the egg and mix everything together.
  • Incorporate the milk smoothly, gently bringing the mixture together without overmixing.
  • Prepare the baking tray with foil and non-stick baking paper. Shape the mince mix into a loaf of equal thickness and bake in the oven for one hour.
  • While the meatloaf cooks, combine ketchup, Worcestershire sauce, sugar, mustard, and cayenne (if using) in a saucepan over medium heat until thick and syrupy. Taste and adjust seasoning, adding more Worcestershire sauce if needed. Remember, the glaze will intensify in flavor when reduced, so use cayenne sparingly.
  • After 30 minutes, remove the meatloaf from the oven and generously coat the top and sides with two-thirds of the sauce using a pastry brush or knife.
  • Continue baking the meatloaf at 355°F for 40 minutes, but monitor it after 30 minutes due to variations in thickness, ingredient temperatures, and oven settings. Glaze any dry spots on the meatloaf as needed. Once fully cooked to an internal temperature of 65°C (149°F), remove from the oven.
  • Cook the meatloaf until it's fully cooked and the glaze becomes sticky, tangy, and caramelized. Rest for at least 5 minutes before serving.
  • For a delectable spread, accompany the meatloaf with creamy mashed potatoes, oven-roasted tomatoes placed below the meatloaf, and a side of vibrant dark leafy greens like silverbeet or spinach. Remember to lightly sprinkle flake salt on the sliced meatloaf before serving to enhance the flavors.
