Healthy vegetable-filled meatloaf recipe by Michelle Bridges, only 444 calories per serving.
Ingredients:
  • 500g beef mince
  • 1 egg
  • 41.60 gm tomato ketchup, plus 1/3 cup, extra
  • 125.00 ml mashed potato
  • 1/2 carrot, peeled, grated
  • 1 celery stalk, finely chopped
  • 150g peeled pumpkin, grated
  • 300g broccoli, cut into 1cm-thick slices
  • 2 corncobs, thickly sliced
  • 200g green beans, trimmed
  • 30g butter
  • Fresh thyme sprigs, to serve
  • Fresh oregano sprigs, to serve
Instructions:
  • Preheat your oven to 200C (180C fan forced) and line a 10 x 22cm loaf pan that's 7cm deep with baking paper on the base and sides.
  • Combine minced meat, egg, ketchup, potato, carrot, celery, and pumpkin in a large bowl. Season to your liking and mix thoroughly until evenly combined. Press the mixture firmly into the prepared pan.
  • Bake the meatloaf for 45-50 minutes until golden brown and cooked through. Let it rest in the pan for 5 minutes before serving.
  • After letting the meatloaf rest, quickly blanch the broccoli, corn, and beans in boiling water for 3 minutes until they are tender. Drain and transfer them to a heatproof bowl. Toss with butter, season to taste, and ensure everything is well coated.
  • Present the sliced meatloaf alongside the additional ketchup and vegetables, then garnish with fresh thyme and oregano sprigs.
