Elevate traditional meatloaf by adding savory onions and peppers for a flavorful twist.
Ingredients:
  • 1 cooking spray
  • 1 onion
  • 1 green bell pepper
  • 1 red bell pepper
  • 1 yellow bell pepper
  • 2.5 pounds ground beef
  • 1 (15 ounce) can tomato sauce
  • 12 crushed saltine crackers
  • 0.25 cup brown sugar
  • 1 egg, beaten
  • 2 tablespoons Worcestershire sauce
  • 2 tablespoons chicken stock
  • 2 tablespoons olive oil
  • 1 tablespoon Montreal steak seasoning
  • 1 clove garlic, minced
  • ground black pepper to taste
  • 0.25 cup ketchup, or as needed
Instructions:
  • Preheat the oven to 350°F (175°C) and generously coat a 9x11-inch baking dish with cooking spray.
  • Thinly slice 3/4 of each onion, green bell pepper, red bell pepper, and yellow bell pepper. Dice the remaining 1/4 of onion and peppers.
  • Combine ground beef, diced onion, and peppers with tomato sauce, crushed crackers, brown sugar, egg, Worcestershire sauce, chicken stock, olive oil, steak seasoning, garlic, and pepper in a bowl, ensuring all ingredients are thoroughly mixed.
  • Layer half of the beef mixture at the base of the baking dish. Add sliced onions and peppers on top, ensuring a 1-inch border. Cover with the rest of the beef mixture, neatly tucking in the sides to encase the vegetables. Finish by generously drizzling ketchup over the meatloaf.
  • Roast in the preheated oven until fully cooked through, about 1 hour, with a temperature of at least 160 degrees F (70 degrees C) in the center when tested with an instant-read thermometer.
