Crispy baked steak flautas stuffed with bell pepper, onion, and cheese for a flavorful meal.
Ingredients:
  • 1 pound beef round steak, cut into thin strips
  • 1 pinch ground cumin, or to taste
  • 1 pinch chili powder, or to taste
  • 1 pinch garlic powder, or to taste
  • 1 pinch onion powder, or to taste
  • salt to taste
  • 3 tablespoons vegetable oil, divided
  • 1 onion, thinly sliced
  • 1 bell pepper, thinly sliced
  • nonstick cooking spray
  • 12 corn tortillas
  • 6 ounces grated Monterey Jack cheese
Instructions:
  • Rub steak generously with a tantalizing blend of cumin, chili powder, garlic powder, onion powder, and salt. Let it marinate for 30 minutes to enhance the flavors.
  • In a hot pan, sauté onion and bell pepper in 1 tablespoon of oil over medium-high heat until soft, about 5 to 7 minutes. Remove vegetables from the pan and set aside on a plate.
  • Heat your oven to a toasty 350 degrees F (175 degrees C) and generously coat a large baking sheet with cooking spray.
  • In the same pan, heat another tablespoon of oil over medium-high heat and cook the steak until fully browned, 5 to 7 minutes.
  • Arrange 6 tortillas on the baking sheet and sprinkle a generous amount of Monterey Jack cheese on top of each one.
  • Bake in the preheated oven for 2 to 3 minutes until the cheese melts. Remove from the oven, add veggies and meat to each tortilla, roll up with seam side-down, brush with remaining vegetable oil, and bake for 8 to 10 minutes until the tortillas crisp up. Repeat with remaining tortillas.
