Create a perfect restaurant-style stovetop steak with a hot skillet, good ventilation, and finish with a luxurious butter and herb baste.
Ingredients:
  • One 3/4- to 1-pound steak, 3/4- to 1-inch thick, such as ribeye, strip, or porterhouse
  • Kosher salt
  • 2 tablespoons unsalted butter, optional
  • A few sprigs fresh thyme or rosemary, optional
  • Flaky sea salt, for sprinkling, optional
Instructions:
  • Prepare the steak: Use paper towels to pat the steak dry, then generously season it with salt all over. Allow the steak to rest at room temperature for 30 minutes.
  • Preheat a large cast-iron or stainless-steel skillet on the stove over medium-high heat until it begins to smoke slightly, about 3 minutes.
  • Pat the steak dry with paper towels again. Cook the steak by adding it to the pan and pressing down to ensure a good sear forms, about 2 minutes per side for a nice crust. For rare to medium-rare, cook for a total of 4 minutes. For medium to well-done, adjust heat to medium-low and continue flipping every minute until desired doneness, approximately 2 to 6 minutes.
  • Enhance flavors by adding butter and herbs to the pan during the final minutes of cooking and basting the dish with the infused butter.
