Grilled fan-sliced potatoes roasted with olive oil, onions, and tangy ranch dressing - ideal steak side.
Ingredients:
  • 0.25 cup extra-virgin olive oil
  • 2 tablespoons dry ranch dressing mix
  • 4 potatoes
  • 1 onion, coarsely chopped
Instructions:
  • Heat up the grill on low heat and gently oil the grate.
  • Combine the olive oil and ranch dressing mix in a small bowl.
  • Place a potato on a cutting board with a wooden spoon on each side. Make 1/4-inch cuts across the potato down to the spoons. Repeat with the rest of the potatoes and transfer them to a heat-proof dish along with the onions.
  • Drizzle the oil-ranch mixture evenly over the onions and potatoes, ensuring they are well coated. Cover tightly with aluminum foil and grill, flipping every 10 minutes, until golden brown, approximately 30 minutes.
