Crispy Parmesan-Ranch Roasted Veggies

Transform your veggies with a zesty ranch dressing mix. Roasted baby red potatoes, broccoli, and red onion are coated in buttery panko, Parmesan, and parsley for a crowd-pleasing dish with addictive flavors.
Ingredients:
  • 5 tablespoons butter
  • 1/4 teaspoon garlic powder
  • 1/4 teaspoon black pepper
  • 1 1/2 lb baby red potatoes, quartered
  • 1 cup red onion wedges
  • 1 package (1 oz) dry ranch salad dressing and seasoning mix
  • 1/8 teaspoon salt
  • 4 cups small broccoli florets
  • 1/4 cup Progresso™ plain panko crispy bread crumbs
  • 1/4 cup shredded Parmesan cheese (1 oz)
  • 2 tablespoons chopped fresh Italian (flat-leaf) parsley leaves
Instructions:
  • Preheat oven to 425°F. Line a 15x10x1-inch pan with foil and spray with cooking spray.
  • Place 3 tablespoons of butter in a large microwavable bowl and microwave uncovered on High for 30 to 60 seconds until melted. Stir in garlic powder and pepper, then add potatoes and onion wedges, tossing to coat. Transfer the mixture to a pan and sprinkle with 2 rounded tablespoons of ranch dressing mix. Toss to coat, spread in a single layer in the pan, and turn potatoes skin-side down. Roast for 29 to 33 minutes until potatoes are very tender. Remove from the oven and stir.
  • In the same bowl, add 1 more tablespoon of butter and microwave uncovered on High for 15 to 30 seconds until melted. Stir in salt, then mix in broccoli until coated. Arrange in a single layer in the pan next to the potato mixture. Roast for an additional 11 to 14 minutes until the potatoes are browned and the broccoli is tender.
  • In an 8-inch skillet over medium heat, melt the remaining 1 tablespoon of butter. Add bread crumbs and cook for 2 to 3 minutes, stirring frequently until they turn golden brown. Remove from heat, then stir in the remaining 1 rounded tablespoon of ranch dressing mix. Transfer to a small bowl and mix in the Parmesan cheese. Sprinkle the bread crumb mixture and parsley over the vegetables before serving.
