Crispy Parmesan zucchini fritters - easy and delicious for any meal!
Ingredients:
  • 1 egg
  • 3 large zucchini, finely grated
  • 5 tablespoons all-purpose flour
  • 4 tablespoons Parmesan cheese
  • 0.25 teaspoon salt
  • ground black pepper to taste
  • oil for frying
  • 1 tablespoon grated Parmesan cheese, or to taste
  • 1 pinch salt
  • 0.25 cup sour cream, for topping
Instructions:
  • Season zucchini with salt and mix well. Let sit for 10 minutes. Transfer to a clean dish towel or cheesecloth and squeeze out excess moisture.
  • In a bowl, vigorously whisk the egg, then incorporate flour, Parmesan cheese, salt, and pepper. Fold in the drained zucchini and blend thoroughly.
  • 1. Heat oil in a medium pan over medium-high heat, then spoon batter into the pan by the tablespoon. Cook fritters until golden brown on both sides, approximately 5 minutes per batch. Plate and top with Parmesan cheese and salt, serving with sour cream while hot.
