Elevate your steak game with a pesto twist on the viral TikTok confit-style method - slowly cook steaks in olive oil, then sear for a perfect finish.
Ingredients:
  • 1 cup fresh basil leaves
  • 0.25 cup olive oil
  • 0.25 cup freshly grated Parmesan cheese
  • 2 cloves garlic, peeled
  • 1.5 tablespoons toasted pine nuts
  • 1 teaspoon salt
  • 2 (5 ounce) filet mignon steaks
  • 1.5 cups olive oil
Instructions:
  • In a food processor, blend together fresh basil leaves, rich olive oil, grated Parmesan cheese, garlic cloves, and toasted pine nuts until you achieve a smooth consistency. Add a pinch of salt and a sprinkle of freshly ground pepper to season the mixture to perfection.
  • Preheat your oven to 200 degrees F (95 degrees C).
  • Season steaks generously with salt, then coat both sides with a layer of flavorful pesto. Transfer the steaks to an oven-safe glass dish and cover with enough oil to fully submerge the meat.
  • Bake steaks in the preheated oven for 40 minutes until the internal temperature reaches 135°F (57°C). Remove steaks from oven and pat dry to remove excess oil.
  • Preheat a cast iron or nonstick skillet over medium-high heat. Sear steaks in the hot oil for 30 to 45 seconds on all sides.
