Chargrilled steak salad with pesto dressing

Whip up a quick and delicious steak salad with zesty pesto in no time! 🥩🥗
Ingredients:
  • 2 2-3cm-thick (about 300g each) beef sirloin steaks, trimmed of all fat
  • 4.60 gm olive oil
  • 250g mixed salad leaves, washed, dried
  • 1 small red onion, peeled, cut into thin wedges
  • 2 small Lebanese cucumbers, thinly sliced
  • 1 red capsicum, quartered, thinly sliced
  • 60.00 gm pesto
  • 60mls (1/4 cup) olive oil
  • 42.00 gm fresh lemon juice
  • 4.50 gm sugar
  • Salt & ground black pepper
Instructions:
  • Heat up your chargrill, barbecue, or grill on high temperature.
  • Brush the steaks on both sides with olive oil, then grill for 2-3 minutes per side to your desired doneness. Allow the steaks to rest before preparing the salad.
  • In a small bowl, mix together the pesto, olive oil, lemon juice, and sugar until well combined to create the pesto dressing.
  • Season the salad leaves, red onion, cucumbers, and capsicum with salt and pepper. Gently toss the ingredients in a bowl. Present the salad on a generous serving platter or distribute among individual plates.
  • Slice the steaks thinly and neatly place them over the salad, then generously drizzle with the flavorful pesto dressing right before serving for ultimate freshness and taste.
