California Black Bean Burgers

Savor a flavorful black bean burger loaded with toppings.
Ingredients:
  • 1 can (15 ounces) black beans with cumin and chili spices, undrained
  • 1 can (4 ounces) chopped green chilies, undrained
  • 1 cup plain dry bread crumbs
  • 1 egg, beaten
  • 1/4 cup yellow cornmeal
  • 2 tablespoons vegetable oil
  • 5 hamburger buns, toasted
  • 1 tablespoon mayonnaise or salad dressing
  • 1 1/4 cups shredded lettuce
  • 3 tablespoons thick-and-chunky salsa
Instructions:
  • Combine beans, chilies, bread crumbs, and egg in a bowl. Shape into 5 patties, each 1/2 inch thick, then coat with cornmeal before cooking.
  • In a 10-inch skillet, heat oil over medium heat. Cook patties for 10 to 15 minutes in the hot oil, flipping once, until they are crispy and cooked through on both sides.
  • On the bottom halves of the buns, layer creamy mayonnaise, crisp lettuce, savory patties, zesty salsa, and finish with the top halves of the buns.
