Avocado pancakes elevate our BLT sandwiches with creamy sweetness.
Ingredients:
  • 5 slices bacon
  • 1 cup Bisquick™ Complete pancake & waffle mix
  • 2/3 cup water
  • 1/2 ripe large avocado
  • 2 tablespoons fresh lemon juice
  • 3 to 6 tablespoons mayonnaise
  • 1 large tomato, sliced, seasoned with salt
  • 5 leaves romaine lettuce, cut into 4-inch-long pieces
Instructions:
  • Preheat the oven to 400°F. Line a sheet pan or shallow baking pan with foil and place a wire baking or roasting rack in the pan. Arrange the bacon slices on the rack. Bake for 10 to 15 minutes until the bacon is crisp. Allow to cool before serving.
  • In a medium bowl, whisk together the pancake mix and water until you have a smooth batter. Make 6 (4-inch) round pancakes following the instructions on the pancake mix box. Allow them to cool.
  • Slice half an avocado thinly, arrange the slices on a plate, and drizzle with lemon juice to keep them fresh. Set aside.
  • Spread a generous amount of mayonnaise on each of the 3 pancakes. Arrange avocado slices evenly on the pancakes, followed by breaking bacon slices in half and placing them over the avocado. Add seasoned tomato slices and lettuce on top. Spread the remaining 3 pancakes with mayonnaise and place them, mayonnaise side down, over the lettuce to make sandwiches.
