Broccoli and orange slaw with zesty citrus dressing.
Ingredients:
  • 1 bag (16 ounces) broccoli slaw
  • 1 small jicama, peeled and cut into julienne strips (2 cups)
  • 3 oranges
  • 1 small red onion, cut in half and thinly sliced (1 cup)
  • 2/3 cup chopped fresh cilantro
  • 3 tablespoons vegetable oil
  • 3 tablespoons lemon juice
  • 4 teaspoons sugar
  • 1 1/2 teaspoons grated orange peel
  • 1/8 teaspoon salt
Instructions:
  • Combine the broccoli slaw and jicama in a large bowl. Use a sharp paring knife to peel the oranges, then cut them into 1/4-inch slices and further slice each piece into fourths. Mix the oranges, onion, and cilantro into the broccoli mixture.
  • Combine all dressing ingredients in a tightly covered container and shake vigorously until well mixed. Pour the dressing over the salad, toss gently, and serve immediately or refrigerate for up to 24 hours.
