Indulge in a flavorful grilled veggie sandwich with zesty lemon-mayo and feta on focaccia.
Ingredients:
  • 3 cloves garlic, minced
  • 1 tablespoon lemon juice
  • 0.125 cup olive oil
  • 1 cup sliced red bell peppers
  • 1 small zucchini, sliced
  • 1 red onion, sliced
  • 1 small yellow squash, sliced
  • 2 (4-x6-inch) focaccia bread pieces, split horizontally
  • 0.5 cup crumbled feta cheese
Instructions:
  • Combine the creamy mayonnaise, aromatic minced garlic, and zesty lemon juice in a bowl. Chill in the refrigerator until ready to use.
  • Preheat the grill to high heat.
  • Coat vegetables with olive oil and grill. Position bell peppers and zucchini in the center, surrounded by onions and squash. Grill for 3 minutes per side, adjusting time for peppers if needed. Remove from grill and set aside.
  • Spread the creamy mayo mixture on the bread cut sides, sprinkle with tangy feta cheese, and grill cheese side up with the lid on for 2 to 3 minutes until bread is warm and cheese is slightly melted. Be mindful not to burn the bottoms. Take off the grill, top with crisp vegetables, and savor these open-faced grilled sandwiches.
