Sherry-Lemon-Garlic Chicken with Julienne Vegetables: A flavorful and elegant entree.
Ingredients:
  • 4 skinless, boneless chicken breast halves
  • 0.25 cup all-purpose flour
  • 1 teaspoon salt
  • 1 teaspoon ground black pepper
  • 1 tablespoon olive oil
  • 0.5 cup cooking sherry
  • 0.5 cup chicken broth
  • 1 clove garlic, minced
  • 0.5 lemon
  • 4 carrots
  • 4 zucchini squashes, julienned
Instructions:
  • Coat chicken in a flavorful mix of flour, salt, and pepper by placing them in a resealable plastic bag and giving it a good shake. Take the chicken out of the bag, gently shaking off any extra flour.
  • In a large skillet over medium-high heat, heat oil until shimmering. Sear chicken on both sides until beautifully golden, approximately 5 minutes each. Transfer chicken to a plate and keep aside.
  • In the same skillet, blend sherry, broth, garlic, and a squeeze of lemon and bring to a boil. Add chicken back to the skillet, lower the heat, and simmer gently until chicken is cooked through and no longer pink inside, about 15 to 20 minutes.
  • Sauté tender carrots and zucchini in a separate skillet, then add to simmering chicken and sauce. Heat through before serving.
