Elevate shrimp with zesty Mexican crema sauce, perfect over rice.
Ingredients:
  • 2 tablespoons butter
  • 0.5 red bell pepper, diced
  • 0.5 green bell pepper, diced
  • 2 cloves garlic, diced, or more to taste
  • 1 cup chicken broth
  • 1 (7 ounce) can chopped green chilies
  • 3 tablespoons Mexican crema
  • 2 teaspoons ground dried chile de arbol peppers, or to taste
  • 0.5 teaspoon ground cumin
  • 0.5 teaspoon dried Mexican oregano
  • 1.5 pounds uncooked medium shrimp, peeled and deveined
Instructions:
  • Heat butter in a skillet until melted and sizzling. Cook bell peppers, onion, and garlic in the fragrant butter until tender and onion turns translucent, about 5 to 7 minutes. Set aside the veggies in a warm place, keeping the flavorful pan juices for later use.
  • In a separate pan, simmer broth and green chiles. Turn off heat and slowly stir in cream cheese until fully incorporated. Mix in Mexican crema, chile de arbol, cumin, and oregano. Incorporate peppers, onion, and garlic. Remove from heat.
  • Heat the pan with juices over medium-high heat until sizzling. Sear shrimp until they turn bright pink on the outside and the meat is opaque, about 1 to 2 minutes per side. Mix shrimp into creamy sauce and plate up.
