Campfire foil packet meal with chicken, potatoes, mushrooms, and peppers - easy prep, minimal cleanup, maximum flavor.
Ingredients:
  • 1 pound skinless, boneless chicken breast meat - cubed
  • 2 onions, diced
  • 1 (8 ounce) package sliced fresh mushrooms
  • 1 yellow bell pepper, seeded and sliced into strips
  • 1 red bell pepper, seeded and sliced into strips
  • 4 cloves garlic, sliced
  • 4 small potatoes, cubed
  • 0.25 cup olive oil
  • 1 lemon, juiced
Instructions:
  • Prepare all your delicious ingredients.
  • Build a roaring campfire and let it burn down to create a glowing bed of hot coals. Carefully move the coals to one side, spreading them out evenly to create a flat cooking surface.
  • Mix the chicken, onion, mushrooms, peppers, garlic, and potatoes in a large bowl or resealable plastic bag. Drizzle with olive oil and lemon juice, then toss to ensure everything is evenly coated.
  • Divide the mixture equally among 4 large sheets of aluminum foil. Place another sheet of foil on top of each, then tightly roll up the edges. Double wrap each packet with an additional sheet of foil.
  • Grill the chicken over hot coals for about 40 minutes until no longer pink in the center and the juices run clear. Use an instant-read thermometer to ensure the internal temperature reaches 165°F (74°C).
