Curry-spiced vegetables and chickpeas cooked in foil packs over a campfire for a delicious vegetarian camping meal.
Ingredients:
  • 1 head cauliflower, broken into florets
  • 1 (15 ounce) can chickpeas, drained
  • 5 red potatoes, cut into cubes
  • 1 zucchini, chopped
  • 1 yellow squash, chopped
  • 1 sweet onion, chopped
  • 1 tablespoon olive oil, or as needed
  • 0.25 cup curry powder, or to taste
  • 0.33333334326744 cup vegetable broth, or as needed
Instructions:
  • Prepare a glowing bed of coals on one side of a campfire or preheat an outdoor grill.
  • In a large bowl, mix together cauliflower, chickpeas, potatoes, zucchini, yellow squash, and onion.
  • Lay two 2-foot sections of aluminum foil on top of each other and fold the edges together to seal. Spread olive oil in the center, leaving space on the sides. Add a generous amount of cauliflower mixture, season with curry powder, salt, and pepper, and drizzle vegetable broth on top. Seal with more foil and repeat with the rest of the cauliflower mixture.
  • Fold the 2 longer sides of each foil packet over the cauliflower mixture, pressing firmly to seal, then roll up the sides towards the center to secure.
  • Position the packets alongside the campfire leveraging long tongs. Grill until the cauliflower mixture yields to slight pressure when squeezed with the tongs, approximately 20 to 30 minutes.
  • 1. Remove the packets from the heat and allow them to cool for approximately 5 minutes. Then, carefully open them from the top while maintaining the rolled-up sides to form a bowl.
