Campfire pineapple cake packets: Individual sponge cakes filled with pineapple, topped with brown sugar and cherries, baked in foil for a fun outdoor treat.
Ingredients:
  • 6 sheets heavy duty aluminum foil (10x12-inch)
  • 1 (12 ounce) package prepared sponge cake shells
  • 1 (20 ounce) can crushed pineapple, drained, juice reserved
  • 2 tablespoons brown sugar, divided
  • 0.33333331346512 cup chopped pecans, divided
  • 18 maraschino cherries
Instructions:
  • Prepare the aluminum sheets by spraying them with cooking spray. Place a sponge cake shell in the center of each sheet. Fill the cakes with crushed pineapple evenly, sprinkle each with about 1 teaspoon of brown sugar and roughly 2 teaspoons of nuts. Garnish each cake with 3 maraschino cherries, then drizzle 1 to 2 teaspoons of pineapple juice over the top of each cake.
  • Wrap the cakes in foil, allowing space for air circulation. Cook the foil packs on the campfire embers until the cakes are hot and bubbling, approximately 10 minutes.
