Savory skillet meal of beans, smoked sausage, and veggies - perfect for camping or any weeknight. Teen-approved dish, serve with salad and crusty bread.
Ingredients:
  • 1 tablespoon vegetable oil
  • 2 carrots, diced
  • 2 stalks celery, diced
  • 1 small yellow onion, diced
  • 2 cloves garlic, chopped
  • 0.5 pound smoked sausage, sliced
  • 1 (15 ounce) can kidney beans, rinsed and drained
  • 1 (15 ounce) can cannellini beans, rinsed and drained
  • 1 (14.5 ounce) can diced tomatoes, drained
  • 2 bay leaves
  • 1 teaspoon dried thyme
  • 0.5 teaspoon salt
  • 0.25 teaspoon ground black pepper
  • 1 tablespoon chopped fresh parsley
Instructions:
  • In a large skillet over medium-high heat, sauté carrots, celery, onion, and garlic in oil until the onion is transparent. Add sausage and continue cooking until browned.
  • Add kidney beans, cannellini beans, and tomatoes to the pot, then season with bay leaves, thyme, salt, and pepper. Cover and simmer over low heat for 10 minutes, stirring occasionally until vegetables are tender.
  • Remove and discard the bay leaves. Sprinkle parsley on top before serving.
