Try this quick and delicious meatless cassoulet for a classic French-inspired dinner in just 35 minutes!
Ingredients:
  • 1 tablespoon olive or vegetable oil
  • 2 medium stalks celery, sliced (1 cup)
  • 2 medium carrots, sliced (1 cup)
  • 1 medium onion, chopped (1/2 cup)
  • 1 can (15 to 16 ounces) great northern beans, rinsed and drained
  • 1 can (15 to 16 ounces) dark red kidney beans, rinsed and drained
  • 1 can (14 1/2 ounces) stewed tomatoes, undrained
  • 2 tablespoons molasses
  • 3/4 teaspoon dried thyme leaves
  • 1/4 teaspoon salt
  • 2 tablespoons chopped fresh parsley
Instructions:
  • In a large skillet, heat oil over medium-high heat. Sauté celery, carrots, and onion for 4 to 6 minutes, stirring occasionally, until crisp-tender.
  • Add the remaining ingredients, except for the parsley, and cook uncovered over medium-low heat for 10 to 15 minutes until the vegetables are tender. Garnish with a sprinkle of fresh parsley.
