Make a crowd-pleasing Canadian flag cake for Canada Day! Vanilla sheet cake topped with whipped frosting and strawberries.
Ingredients:
  • 1.5 cups white sugar
  • 1 cup butter, softened
  • 3 large eggs, at room temperature
  • 0.5 cup sour cream, at room temperature
  • 2.5 cups all-purpose flour
  • 2 teaspoons baking powder
  • 1 teaspoon baking soda
  • 1 pinch salt
  • 1 cup milk, at room temperature
  • 1 (8 ounce) package cream cheese, softened
  • 0.5 cup white sugar
  • 1 teaspoon vanilla extract
  • 2 cups heavy whipping cream
  • 2 cups sliced fresh strawberries
Instructions:
  • Preheat the oven to 350°F (175°C) and prepare an 11x17-inch baking pan by greasing and flouring with 1-inch high sides.
  • In a large bowl, use an electric mixer on medium speed to cream together the sugar and butter until light and fluffy. Add eggs one at a time, then mix in sour cream and vanilla until well combined.
  • Combine and sift flour, baking powder, baking soda, and salt. Gradually add the dry ingredients to the butter mixture along with milk, mix until just combined. Scrape the bowl, then finish mixing with a rubber spatula. Pour batter into pan, spread evenly, and smooth the top.
  • Bake in the preheated oven for approximately 20 minutes until a toothpick inserted near the center comes out clean. Allow the cake to cool completely for about 30 minutes. Gently run a paring knife around the edges of the pan to remove the cake. Invert the pan onto a plate to transfer the cake for serving.
  • Prepare the frosting by blending cream cheese, sugar, and vanilla in a bowl using an electric mixer until fluffy, for about 2 minutes on medium speed. Gradually add cream on low speed, then increase to medium-high speed and beat until stiff peaks form, for about 2 minutes.
  • Spread the creamy cheese mixture smoothly over the cake's top and sides.
  • Decorate the cake: Lay overlapping strawberry slices in 2 to 3 rows along the short sides to create the red stripes of the Canadian flag. Using a toothpick, outline a maple leaf shape in the center of the cake. Place strawberry slices pointed towards the center to form the leaf's shape and cut a strip for the stem. Fill in the maple leaf shape with more sliced strawberries.
  • Chill the cake until you're ready to enjoy it.
